Maple Glazed Chicken breasts with mustard

Ingredients

1 tablespoon unsalted butter

1 tablespoon chopped parsley

salt and pepper

1 tablespoon extra virgin olive oil

4 chicken breasts, boneless

2 tablespoons maple syrup

2 tablespoons sherry vinegar

120ml chicken stock

3 tabelspoons Dijon mustard 

Directions
  1. Preheat the oven to 220°C/400°F.
  2. In a large heavy saucepan melt butter and stir in parsley, season with salt and pepper, sauté chicken breasts skin side down until browned. This will take about 4 minutes.
  3. Flip the chicken breasts over and place in the oven and roast for 7 – 10 minutes.
  4. Bring the saucepan back to the stove top and add vinegar and syrup and bring to a simmer. Turn the chicken breasts skin side down, this will get a nice glaze on them. Leave for about 30 seconds to 1 minute skin side down.
  5. Transfer to plates side side up. Now add the stock to the pan and scrape any brown bits to add flavor to the sauce. Stir in the mustard, mix and spoon over chicken breasts.
  6. Serve with mashed potatoes, salad or some brown rice. 

A few simple ingredients here really pack a great punch of flavor into this chicken dish!
